French Almond Meringues
With an airy, crisp outer shell and soft center, these meringues are the perfect sweet treat. The warm almond flavor makes a perfectly fluffy morsel that melts in your mouth.
4 room temperature egg whites
1 cup granulated sugar
1/4 teaspoon cream of tartar
1/2 teaspoon almond extract
Prep: Preheat oven to 225’. Line baking sheet with parchment paper.
Beat eggs in an electric mixer until frothy.
Add cream of tartar and beat until peaks form.
Add sugar, one spoonful at a time.
Add almond extract.
Place mixture on sheet in 2 inch diameter (see notes)
Bake for one hour, turn off heat and let sit overnight in the oven.
For a rustic look, spoon meringue mixture onto baking sheets. For a more defined look, use a pastry bag and a star tip to pipe.
To add color, stripe the inside of your pastry bag with food coloring
