A croque madame is the perfect brunch sandwich to absolutely wow your brunch guests. With thick slices of artisan bread, gourmet cheese oozing out of every corner and topped with a sunny side up farm fresh egg… this sandwich is the definition of delicious.
1/4 cup butter
1/4 cup flour
1 1/2 cup milk, room temperature
1/4 teaspoon ground mustard
pinch of nutmeg
10 slices of thickly sliced bread
10 slices thick black forest ham
3 cups gruyere cheese
1/4 cup grated parmesan
Melt butter in saucepan over medium heat. When melted, whisk in flour and simmer, stirring constantly until bubbling for three minutes.
Slowly pour in milk will stirring, bringing to a boil. Reduce heat to medium low and continue to stir until thickened.
Remove from heat, stir in 1/2 cup of gruyere cheese and season with salt, pepper, nutmeg and ground mustard.
Preheat oven to 400’
Spread one side of 5 bread slices with sauce. Place on baking sheet, sauce side up.
Top with ham, gruyere and parmesan.
Spread one side of remaining 5 bread slices with sauce and place on top, sauce side up. Top with gruyere and parmesan.
Bake for 5 minutes until cheese is melted, then broil until top is golden brown.
Remove from oven and top with fried egg, cooked to your liking.
